Step by step method

  • Step 1

    Use your hands to squeeze the excess liquid from the carrot and zucchini. Place the carrot, zucchini, tofu, onion, celery, egg, breadcrumbs and curry paste in a medium bowl. Chop 2/3 of the basil and add to the bowl with salt and pepper. Use a wooden spoon to mix until well combined. Divide the mixture into 4 and shape into patties about 2cm thick. Finely shred the remaining basil and set aside.

  • Step 2

    Preheat grill on medium-high. Heat the oil in a large non-stick frying pan over medium-low heat. Add the patties and cook for 5 minutes each side or until golden and cooked through.

  • Step 3

    Meanwhile, place the bread rolls under preheated grill and cook for 1-2 minutes each side or until toasted.

  • Step 4

    To serve, place bread roll bases on serving plates and top with lettuce and then patties. Sprinkle shredded basil over the patties. Drizzle with sweet chilli sauce and cover with the bread roll tops.

Tips & variations

  • The patties are best made just before cooking.
