Step by step method

  • Step 1

    Combine the tamarind puree, sugar and water in a smallbowl. Taste and season with salt.

  • Step 2

    Combine the tomato, cucumber, onion and chilli in a mediumbowl. Add the tamarind mixture and toss to combine.

  • Step 3

    Add the coriander and stir until just combined. Serve.

Tips & variations

  • Time plan tip: Prepare to the end of step 2 up to 1 day ahead. Cover with plastic wrap and store in the fridge. Continue from step 3 just before serving.
