This salad is bright and colourful, and is bursting with flavour, too thanks to chilli, coriander and tangy-sweet tamarind.

Combine the tamarind puree, sugar and water in a smallbowl. Taste and season with salt.
Combine the tomato, cucumber, onion and chilli in a mediumbowl. Add the tamarind mixture and toss to combine.
Add the coriander and stir until just combined. Serve.
Time plan tip: Prepare to the end of step 2 up to 1 day ahead. Cover with plastic wrap and store in the fridge. Continue from step 3 just before serving.
