For a quick and easy starter, try our inside-out Greek salad, complete with feta, olives and cherry tomatoes.
Combine the tomato, onion, olive and capsicum in a bowl. Drizzle with a little lemon juice and olive oil. Season.
Halve the cucumbers lengthways and use a teaspoon to scoop out the seeds. Fill with the tomato mixture. Crumble over the feta and sprinkle with fresh oregano leaves. Drizzle with olive oil to serve.
