In a large saucepan heat oil over a medium heat. Add onion to pan and cook for 2-3 minutes until softened.
Pour stock and tomatoes into pan, bring to a simmer, add carrots, zucchini and potatoes. Cover, cook for 20 minutes, stirring occasionally.
Remove lid, stir pasta into soup and cook for a further 15 minutes, until pasta is cooked.
Sprinkle soup with fresh parsley to serve. Serve with crusty bread or toast.
