This simple tartare sauce is a fantastic side dish to serve with fish or chicken.

Combine egg yolks and mustard in a bowl. Gradually add oil in a thin stream, whisking constantly until thickened. Add vinegar, gherkins, capers, parsley and lemon juice. Stir to combine. Cover and refrigerate.
Tip: Serve sauce with seafood or grilled chicken.
