Cherry tomatoes make cute little holders for this cheesy filling.

Cut tomatoes in half. Use a teaspoon to scoop the flesh from each tomato half.
Combine celery stick, carrot, capsicum and cream cheese, softened, in a small bowl. Spoon the cream cheese mixture among the tomato shells. Sprinkle with alfalfa sprouts.
Swap it: Swap the carrot for shredded chicken and the cream cheese for mayonnaise.
