Step by step method

  • Step 1

    Heat the oil in a large non-stick frying pan over medium-high heat. Add the onion and garlic, and cook, stirring often, for 3 minutes or until the onion softens slightly. Add the pumpkin and increase heat to high. Cook, stirring occasionally, for 6-7 minutes or until the pumpkin is lightly browned.

  • Step 2

    Add the tomatoes and water. Reduce heat to medium-high, cover and cook, stirring occasionally, for 12 minutes or until the pumpkin is just tender.

  • Step 3

    Stir in the beans, parsley and oregano. Cover and cook for a further 3-5 minutes or until heated through.

  • Step 4

    Meanwhile, cook the pasta in a large saucepan of salted boiling water, following packet directions, until al dente. Drain and return to the pan. Add the pumpkin mixture to the pasta and toss gently to combine. Taste and season with salt and pepper.
