Combine the avocado, onion and lime juice in a small bowl. Season with salt and pepper.
Arrange the corn chips on a serving platter. Top each chip with 2 teaspoons of refried beans and spread to edges. Top each with 1 teaspoon of the avocado mixture, 1 teaspoon of sour cream, 1 tomato slice and a coriander leaf. Serve.
You can prepare this recipe to the end of step 1 up to 2 hours ahead. Cover with plastic wrap and place in the fridge. Continue from step 2 up to 30 minutes before serving.
