Step by step method

  • Step 1

    Preheat oven to 220°C. Wipe the caps of the mushrooms with damp paper towel to clean. Remove the stems and discard. Place the mushrooms, stem-sides up, on 2 baking trays.

  • Step 2

    Place the feta, 1 tablespoon of the oil with oregano, lemon juice and garlic, in a medium bowl and toss to combine. Sprinkle the feta mixture evenly into the mushrooms and season with pepper.

  • Step 3

    Bake mushrooms in preheated oven, swapping trays halfway through cooking, for 15-20 minutes or until mushrooms are tender and feta is light golden. Transfer mushrooms to plates. Sprinkle with parsley and more pepper. Drizzle with the remaining oil and serve with lemon wedges.

Tips & variations

  • These mushrooms can be made to the end of step 2 up to 1 hour ahead. Keep, covered with plastic wrap, in the fridge. Continue from step 3, 20 minutes before serving.
