Step by step method

  • Step 1

    Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, for 5 minutes or until soft. Add the coriander seeds and cook, stirring, for 30 seconds or until aromatic.

  • Step 2

    Add the mango, sugar and vinegar. Simmer for 45 minutes or until the chutney thickens. Set aside to cool. Transfer to a serving bowl to serve.

  • Make it ahead: Make up to 3 days ahead. Store in an airtight container in the fridge.
