This sweet and spicy chutney is the perfect accompaniment to the Christmas ham.

Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, for 5 minutes or until soft. Add the coriander seeds and cook, stirring, for 30 seconds or until aromatic.
Add the mango, sugar and vinegar. Simmer for 45 minutes or until the chutney thickens. Set aside to cool. Transfer to a serving bowl to serve.
Make it ahead: Make up to 3 days ahead. Store in an airtight container in the fridge.
