Step by step method

  • Step 1

    Use a sharp knife to cut down the length of the corn close to the core to remove the kernels from the cobs. Place the corn kernels in a food processor and use the pulse button to lightly crush them, being careful not to over process them.

  • Step 2

    Transfer to a bowl and add garlic, eggs and flour. Mix well. Season with salt and pepper.

  • Step 3

    Heat oil in a frying pan over a medium heat. In batches, cook tablespoonfuls of the corn mixture for 1-2 minutes each side or until golden and cooked through. Transfer the fritters to a plate lined with a paper towel. Repeat with the remaining corn mixture.

  • Step 4

    To make the chilli dressing, place the red chilli, ginger, lime juice and sesame oil in a bowl and whisk together. Season with salt.

  • Step 5

    Divide the rocket between the serving plates and top with the corn fritters. Drizzle with the chilli dressing and serve immediately.
