An Italian feast would not be the same without this simple yet delicious salad of tomatoes and bocconcini.

Cut each bocconcini into 4 slices. Cut tomatoes into 5mm-thick slices. Halve and peel avocado and cut flesh lengthways into slices.
To serve, arrange tomato, avocado and bocconcini slices on serving plates. Sprinkle each serve with 1 teaspoon of olive oil, the torn basil leaves and black pepper. Serve with the Ciabatta bread.
Bocconcini are small balls of fresh mozzarella sold either individually or in pre-packaged containers. Gourmet tip: Use extra virgin olive oil.
