Cook cauliflower in a saucepan of boiling water for 1 minute, drain, then refresh under cold water and drain very well.
Bring 400ml water, 1 teaspoon sea salt, oil and cinnamon to the boil in a saucepan, then stir in the couscous. Turn off the heat, cover pan with a tight-fitting lid and leave for 10 minutes.
Tip the couscous into a large bowl, then add cauliflower and remaining ingredients and stir together with a fork. Scatter with extra mint leaves and serve.
