10 ways with peanut butter
Serving peanut butter on bread may be your usual fare but there are plenty of other ways to enjoy this spread — just be sure to use a no-added-salt-or-sugar peanut butter variety.
1. Spicy satay sauce
Combine 1 teaspoon grated fresh ginger, 2 tablespoons crunchy peanut butter, 1 tablespoon salt-reduced soy sauce, 2 tablespoons sweet chilli sauce, 2 tablespoons honey, and 1/4 cup water together in a saucepan. Bring to a gentle simmer, stirring, and add a little more hot water if needed. This will make enough flavouring for a stir-fry for 4.
2. Peanut butter celery logs
The kid-friendly classic (great for adults, too). Spread peanut butter inside celery sticks as a snack.
3. Chewy peanut butter and chocolate cookies
This classic HFG recipe with just five ingredients is a crowd pleaser.
4. Recipe substitution
Experiment with replacing butter with peanut butter in slice and muffin recipes. It will add healthy fat and a nutty flavour.
5. Peanut butter and banana toasted sandwiches
Spread peanut butter on fruit bread or wholegrain bread and mash banana on top. Close with another piece of bread and grill in a sandwich press or a dry pan.
6. Chilli peanut stir-fry
Stir-fry chicken or meat pieces with your favourite vegetables. Add 1 tablespoon peanut butter and 1 tablespoon sweet chilli sauce. Cook for 1-2 minutes. Add a little water to make a sauce.
7. Peanut butter and banana smoothie
For a delicious smoothie, blend 250ml trim milk, 1 tablespoon rolled oats, 1 tablespoon peanut butter and 1/2 banana in a blender until smooth.
8. Peanut butter ice-cream
Mix a little peanut butter through softened chocolate or vanilla flavoured low-fat ice cream for a delicious treat.
9. Healthy topping
Instead of after-work crackers and cheese try crackers with peanut butter for protein but a lot less saturated fat.
10. Peanut dip
Make a tasty dip by combining 1/2 cup low-fat yoghurt with 2 tablespoons peanut butter. Stir to combine and serve with vege sticks
and rice crackers.
